inspiration: soak it up

So, I've been a fan of Elizabeth Olsen since I saw her in Martha Marcy May Marlene a few years ago. I think she's a really talented actress, and I like her style. But, now since I saw the Avengers last Friday, I'm kind of obsessed with her. I enjoy actresses who aren't full of themselves, and seem like really friendly, easy going people. Apparently, I judge my liking of famous people based on whether or not I would want to be friends with them.

It's a simple quote from her, but I think it works for many situations. Out in the working world, the days seem to go by monotonously. I wish I could say that I'm learning things every day, or pushing myself, but I tend to get up, get to work, get home, and repeat until it's the weekend. The world is a huge place with a bijilion people and places and things for us to discover. Trying to soak up a little something each day seems like a good place to start.

pinterest find: overnight oats

I seem to be living vicariously through pinterest these days. I'm finding so many things that I want to try, that I now get the obsession. One find that I've been loving is overnight oats. For a while, I was doing the bagel and cream cheese overload for breakfast each day. It didn't leave me feeling full or good. I decided to try the oats thing, mainly because people made it look oh so cute in those mason jars. Yup, mason jars aren't going anywhere. And I don't mind.


The great thing about these oats is that you can do whatever you want with them. I never hopped on the greek yogurt bandwagon like Bobby Flay seems to think, but I do know that it's a healthy option (I just can't stand the taste though!). I'm also currently obsessed with Vanilla Almond Milk. Ever since I came back from England, I have to have milk in my tea. Every morning I make chai tea, then add the almond milk. Mmm it's sooo good.

Here's how I do these oat things:

WHAT YOU'LL NEED
  • Oats, not instant though!
  • Vanilla almond milk
  • Mini chocolate chips
  • Honey
  • Greek yogurt, whatever flavor you please
  • Vanilla granola cereal

WHAT YOU'LL DO
  • At night, put the dry oats in a container of your choice. You may know that I'm the worst at measurements and mainly rely on eyeballing it, so just go with how many you think you'll eat. It is quite filling, so it may take a few tries. 
  • Add some chocolate chips, as many as you'd like.
  • Add a few drops of honey.
  • Add a spoonful of yogurt, or if you like the taste, add a ton.
  • Add the almond milk, enough to coat the oats, then stir. If the oats seem too dry, add a bit more. They should be covered enough, but not swimming in milk. You'll get it.
  • Let sit overnight.
  • In the morning, add a little of the granola cereal for a crunch.

And that's it. Good stuff, and so easy in the morning to grab and go. Of course, there are so many pins out there with mouthwatering flavors and crazy ideas. Here are a few that look amazing:

follow up: i can see clearly now & greys anatomy

Heyyy Friday, it's good to see you again. This week was a short one for me because I finally had LASIK surgery!

I can see things. Yesterday was my surgery. The procedure was so quick, actually. Beforehand, they give you a valium to calm you down. Apparently, I am immune. I was not calm. The doctor kept telling me to take deeper breaths and I told him that I thought I was breathing. I'm thinking it was the whole being strapped down, staring at a light, while my eye is being held open that led to said shallow breaths. After a few minutes, everything was complete, they sat me up, and I could read the time on the clock! I haven't been able to see without help since the fourth grade. I'm still amazed. My mind cannot handle it! I'm now onto the daily eye-drop regime, and am terrified of rubbing my eyes (huge no no). This has been one of the best decisions I ever made.
How could you, Shonda. I've been a fan of Grey's Anatomy since the second season, when the first episode I ever watched was the code black bomb one. Of course, it's been up and down for my liking of the show since the glory days, but I've stuck with it. It reminds me of college when my roommates would all huddle around the tv thursday nights to watch our show. Over the Christmas break, I even re-watched the first three seasons. It was such a good show back then. Last night, as I watched through my required after-surgery-shades, I couldn't believe what happened. I won't spoil it for those who aren't caught up, but GAH. I did not need the artificial tears then! And don't even get me started on the music. Chasing Cars and How to Save a Life will always remind me of Greys. I know it's just a television show, but it's been ten years, that's a long relationship, haha.

I'm off to relax my eyeballs and put drops in them every. half. hour. Enjoy your weekend!

the year of thirty

This is the year that I turn thirty. The big 3-0. I'm trying to embrace it, but it just sounds so old, especially when I feel a lot younger.

I never started one of those 30 before 30 lists. I tried, but couldn't come up with anything. Now that I'm months away, I'm looking to accomplish as much as I can before August. Not that entering a new decade means everything is over, but there is a sense of accomplishment that I can say I've done certain things all before I turned.
House cat. Obviously, you know the big one on the list at the moment is a buying a house. This then leads into my second goal of rescuing my future cat from a shelter. I miss having a pet, though my friend's cat just bit my arm for no particular reason this weekend. Maybe I'm not the cat whisperer I claim to be.

Fix the eyeballs. Another thing that I have lined up is LASIK for my eyeballs who hate me right now. I wrote about my eye issues last year: learn from my contact wearing mistakes. Well, they returned as soon as I started to put monthly contacts in. I had enough so I booked myself a consult appointment to get my eyes corrected. I can't even imagine waking up and being able to see. My surgery is set for next Thursday!

Channel my inner Lizzie McGuire. The other major thing that I have booked is a summer trip to Italy and Greece!! I am so excited to be able to cross Santorini off my bucket list come the end of July. Two of my friends decided to do a big trip for our 30ths, and they graciously invited me along. I've been to Italy in Epcot and ate at the restaurant. We had about five male waiters coming to our table constantly. If those guys are any indication of the men I'll encounter during my travels, then I am very much looking forward to that. And pizza. Always pizza.

Learn something. Finally, my goal is to learn as much Italian as I can before I leave. When I travel, I try to blend in as much as possible and avoid being that obnoxious American tourist. I'm listening to a podcast called My Daily Phrase Italian and a youtube channel called Learning Italian with Lucrezia to introduce me to the language and prepare me enough to get around the city. I'm loving it right now and trying to soak up as much as I can, si!

This just might be my most accomplished year yet!

checking in

I know it's been a couple of months of me being MIA here. My status update is that I'm still living at home with the parents while I'm on the house hunt. It's been a slow process so I haven't had that much inspiration to post here. I'd rather be on my merry way to living in my own place before I start to post regularly. It's weird, I know, but it's tough when you have zero alone time. The only time I have to myself is in the car.

Time is flying, though. I still can't believe that I've been home since November. I have a few things lined up for the months to come that I'm excited to share with you!

blog neglect

It's been an entire month since I moved home and started a new job, and it's also been a month of only two posts on the blog. I'd love to say ohhh I'm so busy or ohh I'm just swamped, but I'm really just trying to figure out a schedule of when I can write and catch up on blogs (shhh don't tell my old boss, but I used to do most of that at work...who hasn't?!)

But, yes, I admit, I've been a bad blogger and reader. I know a lot of you have had babies or became engaged or other big life things so I also need to catch up with everyone else too!

I also don't have a desk at 'home'. My bed is my desk. It's also my couch, snack table, and quiet place. It's not the best place to sit, think, and type. But, it's the only place that's mine right now. I'd say moving back in with my parents has made me a bit lazy. My meals are cooked, my laundry is cleaned, and nothing is mine to control. I'm really trying not to become an angry teenager again since I'm back in the same room that turned me that way.

So, long story short...I'm still here. I'm getting back into the swing of things. And I'll need something to distract me from sitting on the couch all weekend long ;)

heard about that massive snowstorm?..i'm in it

If you follow me on twitter or instagram then you've probably seen my crazy pics and snow-filled tweets. I live in a suburb of Buffalo that saw the highest amount of snowfall yesterday: 60 inches. 60! I have seen this much snow in my 20+ years, but never in the span of two days. And we're expected to get hit again today.

We were literally snowed in. Our street wasn't plowed yesterday, and when they finally did it this morning, we had about five feet of snow at the end of our driveway. Luckily, a guy with a plow on his truck came from the city over to help people. We paid him $50 and he saved us about five hours of shoveling/snowplowing.

I haven't been to work in two days, they closed the college today. It's been pretty insane here, but also kind of scary. Some people have died, people were trapped in their cars for over 24 hours, and roofs/windows/doors are starting to collapse from the amount of snow. It's nuts, but I'm warm and safe!
